This Easter Sunday, Lucca will feature a lavish brunch buffet and offer a special deal for children under 12 by allowing them to pay according to their age!  The popular Easter brunch buffet, offered on Sunday, April 4 from 9:30 a.m. to 2:30 p.m., will feature a full buffet with a wide variety of options, including items from an egg and omelet station, featuring local, cage-free eggs; and a deluxe carving station with certified Angus beef tri-tip and Diestel free-range turkey breast.


“Easter is a holiday that focuses on family togetherness and, in this day and age, that is extremely important for everyone,” comments Cathy Pavlos, executive chef/owner of Lucca.  “We wanted to appeal to families by offering the best in quality and service, while presenting a special deal for children under 12 years old, who pay their age for their meal, meaning three-year-olds would pay $3 for their brunch, four-year-olds, $4, and so on, until the age of eleven.”


The Easter Sunday brunch buffet is $29.95 for adults ($24.95 without Champagne) and items include:

Five Crowns is perfect for a celebration of Mother’s Day on Sunday, May 9th.   The building has been noted in guidebooks and historical papers as a landmark – North America’s most authentic replica of an English inn –  and its garden setting is especially beautiful in the spring.  A special occasion Brunch and Dinner menu will be offered by Executive Chef Dennis Brask. 

During Brunch served from 10:00 a.m. - 2:45 p.m., a choice of appetizers such as Wild Mushroom Bisque, French Onion Soup, or Pride of the Crowns, Hearts of Romaine or a Garden Salad is included with the entrées. An extensive entrée menu includes Crepes Imperial, Eggs Benedict, Poached Salmon, Roast Beef Hash, Chicken Mango, Beefsteak Neptune, Rack of Colorado Lamb and Aged, Slow-Roasted Prime Ribs of Beef served in three different cuts with Port Wine Jus, Fresh Organic Horseradish Cream, a Yorkshire Popover, Creamed Spinach, Mashed Potatoes and Gravy among the options.

Valentine’s Day - Sundried Tomato, San Clemente

Sundried Tomato American Bistro and Cafés will celebrate a Valentine’s Day to remember on Sunday, February 14, 2010 with a special menu and a romantic ambiance that will not soon be forgotten.

For a celebration of St. Patrick’s Day that includes a bit of intrigue, Five Crowns is serving up a new Murder Mystery Dinner with a special prix fixe menu created by Executive Chef Dennis Brask.  The event starting at 7 p.m. on Wednesday, March 17, is priced at $96 per person, inclusive of tax and gratuity.  Reservations are required, and can be made by calling (949) 760-0331.

The evening will begin with tray-passed hors d’oeuvres.  An appetizer of Porcini Mushroom Raviolis will followed by a Garden Salad of Baby Greens with Toasted Pine Nuts and Gorgonzola Cheese in a Balsamic Vinaigrette.  Guests will have a choice of entrées including Roasted Prime Ribs of Beef served in the traditional manner with Creamed Spinach and Yorkshire Pudding, Roasted Maple Leaf Farms Duckling with Bigarade (Bitter Orange) Sauce on an Apple & Prune Compote served with Hand-Harvested Minnesota Wild Rice, and Yukon Gold Potato-Crusted Salmon with a Smoky Three-Mustard Sauce.  Strawberry English Trifle will be served for dessert.

Romantic Valentine Recipes from Charlie Palmer

With Valentine’s Day just around the corner, many of us are in the planning stages of romantic dinners and thoughtful surprises. To make things easy, our restaurants are offering special dinners for the entire weekend. Tables go quickly, so remember to book as early as possible.

 

On many of our Valentine’s menus coast to coast, you’ll find oysters, and for good reason. When Aphrodite, the Greek goddess of sexual rapture, famously painted rising from sea foam using an open shell as a platform, bestowed her aphrodisiacal qualities on oysters, it was more than myth. In addition to their obviously provocative appearance, oysters are loaded with zinc (which controls progesterone levels), iron and other stamina inducing nutrients.

 

For the romantic DIY’er putting together a seafood platter at home, I’ve included some shucking advice. Picking up the oyster and trying to pry open it in your hand (as you do a clam) is standard amateur mistake.

 

Oysters on the half-shell with Green Apple-Cucumber Dressing 

Serves 4 as an appetizer

 

Depending on the occasion, oysters—particularly those topped with this refreshing green apple and cucumber mignonette—pair well with a tropically-brewed, slightly spicy amber beer like San Miguel Dark Lager, or a crisp Pinot Gris with a citrus snap from Oregon.

 

Ingredients

¾ c Mirin (sweet Japanese rice wine)

½ c rice wine vinegar

2 T extra-virgin olive oil

2 T minced shallot

1 green apple, unpeeled

½ English cucumber, halved lengthwise and seeded

24 oysters, scrubbed clean

For serving: crushed ice or kosher salt

 

Shucking

Opening an oyster is something that must be done carefully with an oyster knife, preferably one with a stainless steel blade and a textured handle for a nonslip grip. An oyster shell is in two parts: one cupped to hold the body and the other relatively flat, like a lid. Using a folded kitchen towel, securely hold the oyster on a stable work surface, cup side down with the point (or hinge side) facing towards you.  Insert the tip of the oyster knife through the hinge and turn your hand (like you are turning an ignition key) until you hear the hinge pop. Give a full twist to scrape the blade across the top of the shell cutting the muscle that attaches the oyster. Then cut the bottom muscle, keeping your hand out of the way and the oyster level at all times (so you don’t lose any of the juice).

 

The dressing

Whisk together the Mirin, vinegar, oil, and shallot in a medium bowl. Julienne the apple and cucumber, then dice them fine. Immediately drop them into the Mirin mixture (the acid in the wine will keep the apple from turning brown).

 

The oysters

This can be done several hours before serving, but oysters are best when fresh­est. It’s preferable to make the dressing, assemble the serving plates, and open the oysters at the last minute.

 

Get out a sheet pan. Take a piece of aluminum foil twice the length of the pan and crinkle it up to fit the pan and create a contoured bed for the opened oysters: You want them to stay level so the liquor doesn’t tip out of the shells. Open the oys­ters and nestle them into the foil. Cover loosely with plastic wrap and refrigerate.

 

To serve

On each appetizer plate form a mound of salt or crushed ice then flatten it slightly. Spoon the dressing over the oysters while they are still on the pan and then carefully transfer them to the plates, arranging 6 oysters on each. Serve with cocktail forks.
