The Sage kitchen (still wheel-less) experiments with a new taco every Tuesday, so there’s only the one, carnal, and it’s muy chingón. Sometimes they’re roasted chicken, braised beef short-rib, pork shoulder or lamb. The meats are slow-cooked with beer, tomatillos, tangerines or mild guajillo chilies. Sometimes there’s fresh fish, snapper or ahi or Belize shrimp. And always something crunchy—freshly chopped cabbage, cilantro and onion, pico de gallo, or fennel and radish slaw. One week might have crunchy fried tacos, just to change it up. A fresh and unique salsa is tailored to that week’s recipe–could be a tangy, bright green tomatillo salsa verde or a mysteriously alluring roja–and Chef insists you always squeeze the lime. ¡Viva la revolución!
