Tomato Confit – One of my favorite all time summer condiments for seafood

Tomato Confit taste great. From dinner recipes, budget menus and healthy diet selections, you’ll easily find any recipe you need.

Ingredients:

1 pint Grape or cherry tomatoes
1 T Thyme – chopped
1/2 C Olive oil
2 t Sea salt
1/2 t Black pepper
2 Shallots – sliced thin
4 Garlic cloves – sliced thin

Directions:

  1. Toss all items together.
  2. Roast in 350 degree oven for half an hour covered and half an hour uncovered.
  3. Drain off excess juices and olive oil and use for an amazing salad dressing.
  4. Chill tomato confit and serve in many different ways.
