  1. Cut the fish into 1/4-inch pieces.Put in a glass bowl with all the citrus juices and salt.Let sit in the refrigerator for at least 20 minutes.
  2. In the meanwhile, chop the onion, tomato and jalapeno.Cut them all the same size, about 1/4-inch just like the fish.Put all of the chopped items, cilantro and cracked pepper into a bowl and add Sriracha.
  3. After the fish is done (at least 20 minutes) add both of the bowls of ingredients together.
  4. Mix thoroughly and enjoy with chips.
