Chef James is the accomplished host of the award-winning PBS television series, Cuisine Culture, which won a Taste Award for Breakout Foodie Show of the Year 2012.’ Come listen to Chef speak as he shares:

1 How to Be Creative on a Budget

How do you handle limited budgets withrising food and beverage costs? Chef James will help demystify food costs, hotels’ financial goals, and how to do more with less.

2 Engaging those Elusive Chefs!

Sometimes we find standard hotel banquet menus too boring and complain that very few chefs turn up at planning meetings or “pre-con”. The hotel’s Chef is one of your most significant and valuable partners in insuring the success of your event, and Chef Ashley will give tips on how to get the chef enthused, excited and involved in your event.

3 Fresh, New Food Trends

Is the term, “Farm to Table Cuisine” overplayed and even true?Is it just a phrase that’s too broadly used now? How to think out side the box when planning menus, and using local foods whenever possible. Learn all about the hot new trends, including food trucks, non-GMO products and knowing where your food comes from!

Discover Chef Ashley’s favorite “Mash-up” dishes: French Fries with Mole, Meatball Lasagna, fish and chip wrap, Boeuf Bourguignon Quesadilla. Ethnic breakfast foods, etc. He says “Biscuits are back and Cauliflower is the new kale.” He’ll reveal new upscale comfort food, the come back of the ice cream sandwich, healthy kids food, the Éclair:the new Macaroon. Creatememorable events outside of the box!

Calling all Young Leaders! Are you 35 years or younger or have less than 5 years of experience in our industry? Have you wanted to ask a meeting planner what is the best way to get their attention? Or how about best practices in negotiating a contract with a hotel or venue? Whether you are a planner or supplier, the SITE SoCal Young Leaders Committee would like to invite all industry professionals under 35 years of age or those who have less than 5 years of experience to join us for an interactive “think tank” session with some of our industry’s leading professionals.
