Born and raised in Vietnam, Chef Kimmy blends a traditional Vietnamese palette of healthy, colorful vegetables, rich in antioxidants with lean proteins, like fish and chicken, with traditional spices that bring out superb taste. With her exclusive flash cooking method, all vital nutrients are retained. Each dish has the perfect ratio of yin and yang ingredients, which bring balance to the body.
While exploring her culinary roots abroad, Chef Kimmy also mastered French cooking and draws on Vietnam’s rich French influence. Dishes like her perfect mignon are accented with her handmade sauces. Made with fresh herbs, spices, and unexpected notes, her famed sauces draw on all her inspirations, are exclusive to 9021Pho, and cannot be found elsewhere.
Entrees also include spice basil chicken with bell peppers and chili and star anise salmon with lemongrass, honey, and lime. On the vegetarian side, there are choices such as grilled eggplant with pan-fried garlic, shallots and peanuts and “Buddha” curry over vegan chicken with sweet peas, yams, carrots, and onion.
