Chef Glen Tinsley grew up here in South Orange County, and is excited to bring his passion for food where it comes from, how its’ raised, and his respect for it home. Glen started his restaurant career at sixteen, working as a waiter in various OC restaurants. His interest in cooking and his love of food meant he spent a lot of time in the kitchen, pestering chefs with questions. Finally, one of them suggested he go to culinary school and find out for himself. Glen attended the California Culinary Academy in San Francisco, and then spent ten years leading kitchens in the Bay Area including The Fly Trap, Ottimista Enoteca, Napa Valley Grille, and AKA Bistro. A move to Italy in 2009 to be the chef of the Michelin ratedAntica Fattoria La Parrina in Tuscany opened his eyes to the importance of locally sourced, sustainable foods, and he hasn’t looked back since. Now, whether it means foraging for m ushrooms, deep sea fishing, or visiting area ranches and farms, his obsession is bringing a quality product to the kitchen and preparing it so you can truly experience it.
