Acclaimed singer-songwriter Moby and prominent chef and television personality Anne Thornton, formerly of Waverly Inn and Hotel Griffou, announce the summer 2015 openingof Little Pine in Los Angeles’ Silver Lake community. Thornton will direct the culinary program at the neighborhood gathering spot, serving comforting vegan cuisine with unconventional recipes that utilize the finestavailable ingredients. A retail space, located at the front of the eatery, will offer eco-sustainable housewares and gifts from Moby and Thornton’s favorite artisans, artists and authors.
Little Pine will be open for dinner nightly and eventually offer breakfast, lunch, and weekend brunch service as well, featuring imaginative vegan dishes made with 100% organic ingredients. The cuisine as well as the retailselection are a reflection of Moby and Thornton’s values of promoting wholesome food, organic farming, animals, and their community. ‘People need a place where they can relax and feel looked after, which is our goal for Little Pine, Moby says. ‘We will not only provide remarkable food, but also a serene space that is an extension of our neighborhood and community.
While Moby has been vegan for 27 years, Thornton recently made the lifestyle change, which she finds exciting and challenging when in the kitchen. ‘I have been cooking my whole life, and a chef for many years. I have always relied on meat, eggs and dairy as my primary ingredients so giving those up forced me to develop new and innovative ways of cooking. It allows me to be really creative, Thornton says. ‘I am confident that our dishes will satisfy even the hungriest of carnivores, with our sophisticated flavor profiles and nutritious ingredients.
Thornton will push the envelope by offering fresh, seasonally-focused plates featuring unexpected ingredient combinations, such as Lemon Mint Pea Pate with crostini and crudités; Roasted Beet Salad with arugula & peashoots, maple cayenne walnuts, cashew ricotta, and spicy mustard vinaigrette; Pan Bagnat with crushed garbanzo beans, niçoise olive tapenade, roasted red peppers, fennel, capers, and parsley on a crunchy baguette;Mushroom Leek Pot Pie with an assortment of exotic mushrooms, leeks, and root vegetables in rich gravy; and Roasted Cauliflower Steak with persillade, cauliflower puree, roasted root vegetables, and sautéed garlicgreens; among others.
Designed by Tatum Kendrick of Studio Hus, the restaurant space marries a laid-back California spirit witha modern riff on nature. Taking inspiration from the Little Pine name, its approachable menu, and Silver
Lake’s artistic community, Kendrick created a space that is light and fun, while still capturing the intimacy and comfort that supports the vegan cuisine and retail space. Kendrick also selected nimble materials with raw andtactile qualities, such as plywood, ceramic tile, and concrete, which is in line with Moby and Thornton’s dedication to sustainability. The layout is balanced with eclectic fabric, and one-of-a-kind artwork for a residentialfeel. Highlights include a mid-century inspired chandelier by local artist Jason Koharik that unifies the main dining area, and a small dining niche that comes to life through a backdrop of custom wallpaper featuring amoody black and white forest scene from Moby’s own photography explorations.
