This New Year’s Eve, L’Auberge Del Mar, A Destination Hotel, will be offering revelers various enticing celebratory choices. Guests can dine lavishly in KITCHEN 1540 with Chef Nathan Lingle’s special Three-Course Champagne Dinner menu; enjoy live entertainment in the resort’s Living Room with the David Shyde Band and then dance the night away to DJ Gabe Vega later in the evening with memorable champagne being served by the glass or bottle.
New Year’s Eve Three-Course Champagne Dinners at KITCHEN 1540
Thursday, December 31, from 5 to 10 p.m.
To help ring in 2016, KITCHEN 1540 is offering a special Three-Course menu with optional champagne pairings to be enjoyed while listening to singer songwriter Michael Tiernan perform.
The Three-Course Menu will offer firsts such as Oysters with apple and riesling jelly and Lamb Tartare with quail egg. Second courses include Lobster Bisque with croquet and truffle and third course features areGuinea Fowl and Dry Aged Beet “Pot Roast” and other selections.
Cost is $125 per person; $155 with champagne pairings, exclusive of tax and gratuity.
Champagne pairings for dinner will include Perrier-Jouet, Grand Brut, NV, Champagne, France; Charles De Casanove Brut Rosé, NV, Champagne, France; and Henriot Brut Vintage, 2006, Champagne, France.

Living Room Entertainment to Usher in a Bright and Bubbly 2016
Thursday, December 31, from 5 p.m. to 1 a.m.
In the Living Room, the David Shyde Band will entertain from 5 to 8 p.m., and DJ Gabe Vega will usher in the New Year from 8 p.m. to 1 a.m. Also, there will be a Pop-Up Bar at the concierge desk and a Champagne Bar in the Living Room Bar. Champagne by the glass will include Piper-Heidsieck Brut, NV, Champagne, France; Nicolas Feuillatte Brut Rose, NV, Champagne, France; Henriot Brut Vintage 2006, Champagne, France; and super premium Perrier-Jouet Belle Epochè, Brut, 2006, Champagne, France.
