New Year’s Eve, at Orange County restaurant, The Ritz Prime Seafood – Second Seating
The Six-Course Tasting Menu for the Second Seating at The Ritz Prime Seafood starts with an Oyster Tasting followed by Uni Custard. The Third Course is Chilled Alaskan King Crab with bacon, caviar, parsnip cream and Burgundy truffle vinaigrette. Foie Gras Profiteroles with Calvados black pepper caramel is the Fourth Course. Fifth Course choices are Maine Lobster Pot Pie with black truffle and cognac cream; Wagyu NY Strip with Vidalia onion, fingerling potato and smoked cheddar mash; John Dory with baby carrots, lentils, curry vinaigrette and béarnaise; or Jidori Chicken Breast with cornbread pudding, mustard greens and black pepper sauce. To end this fabulous feast, the chef features either Chocolate Tart with caramel sauce or Fig and Almond Financier with crème fraîche ice cream.
