Executive Chef Collin Thornton has created a special 4-course menu ($89 pp) with standout dishes that mirror the effortless coastal elegance of resort, including:
Tarragon-poached lobster with a saffron-tomato marmalade
Brown butter John Dory with ricotta gnocchi
and an Herb-crusted rack of lamb in a raspberry red wine reduction.
The final course is a large macaron filled with Itakuja chocolate mousseline, bejeweled halved raspberries, and finished with a sangria reduction.
