Sangria Glazed Roasted Leg of Lamb
Sangria Glazed Roasted Leg of Lamb is a great dish to serve for the holidays and throughout the year. This dish was created by Chef Amar Santana and is sure to please those lucky enough to eat it.
Ingredients:
Ingredients for Lamb:
1 Leg of lamb – bone-in, whole
Salt
Pepper
2 Lemon – zested and juiced
1/4 C Rosemary – chopped
2 T Garlic powder – dried
1 T Onion powder
1 1/2 C Sangria glaze
1 Pomegranate – seeded
Ingredients For Sangria Glaze:
1 Bottle of red wine
1 C Sweet vermouth
1/2 C Orange liquor
2 Cinnamon stick
5 Star anise
1 C Sugar
1/2 C Orange juice
1/2 C Lemon juice
Directions:
- Lamb Instructions:
- Season leg of lamb with salt and pepper then rubbed lemon zest and juice.
- Sprinkle chopped rosemary onion and garlic powder.
- Roast the lamb on a rack at 450°F for about 20 min until golden brown then lower the temp to 375°F and cook for an additional 1hr and 20 min.
- Take the lamb out and let it rest.
- After 20 min glaze the lamb with the sangria glaze and top it with fresh pomegranate seeds.
- Glaze Instructions:
- Combine all ingredients in a saucepan and reduce until about 1 1/2 cups left, use this glaze for the lamb.
