Join Chef Michael as he breaks down a hindquarter of America’s favorite red meat using the seam butchery technique. This fun, informative class will share how we source our meat, the fundamentals of this (almost) lost culinary art, and the basics of cooking each cut of beef.
Because of the large, complex nature of beef butchery, this class is a demonstration and not hands-on like many of our courses, however, students will learn basic knife skills, practice roast-trussing, and chose one cut of our delicious meat to take home.
To celebrate our evening of learning, refreshments are always served at the end of the night.
