Glass Noodles with Green Papaya, Peanuts and Chili Vinaigrette
Glass Noodles with Green Papaya, Peanuts and Chili Vinaigrette.

1 Glass Noodle Pack – (vermicelli)
2 C Green Papaya
2 C Chayote
2 C Peanut – roasted & salted
1 C Mint
1 C Basil
1 C Cilantro
2 C Chili Vinaigrette (ingredient list follows):
Chili Vinaigrette Ingredients (Please note: For less heat, remove pepper seeds before processing)
4 Fresno Chili Pepper
2 Jalapeño
10 Garlic Clove
4 Shallot
2 C Champagne Vinegar
1 C Red Wine Vinegar
1 C Sugar
1 T Salt
1/4 C Fish Sauce
Directions:
- Chili Vinaigrette Instructions:
- Place Fresno chili peppers, jalapeños, garlic, and shallots in a food processor and pulse until minced.
- Then place all ingredients in a pot and bring to a boil.
- Let simmer for five minutes and let cool.
- Main Dish Instructions:
- For the salad, cook glass noodles in half water, half white distilled vinegar until soft; then let cool.
- Slice papaya and chayote into thin strips (julienne).
- Cut the herbs into very thin slices.
- Place all ingredients in a bowl, toss well and enjoy!
