WHAT: TAPS Fish House & Brewery at the Promenade Shops at Dos Lagos in Corona is ready for the holidays with a life-size, custom build gingerbread house fashioned in the style of a Swiss chalet. Twelve feet high and long, it is decorated with edible materials including over 400 pounds of gingerbread, 750 pounds of icing, 95 pounds of vanilla wafers, 20 pounds of marshmallows and thousands of colorful holiday candies. The project, under the supervision of TAPS Culinary Director Tom Hope, took over three weeks to complete and involved 200 hours of labor.

WHEN: The gingerbread house will remain on display through January 2nd.

DICKENS: To complement the fantasy Gingerbread House, TAPS will be introducing a holiday tradition in the making Friday, Saturday and Sunday nights beginning at 4 PM with a three course Holiday Dickens Dinner. It will be priced at $26.95. Guests will begin with choice of a Winter Salad of mixed greens tossed with a pomegranate balsamic vinaigrette, chevre and candied pecans, garnished with Pomegranate seeds or Butternut Squash with Gingerbread Croutons. Entree choices are Creekstone Farms Prime Rib Dinner with all the trimmings, baked potato and chef’s veg or Salmon en Croi»te made with TAPS Award-Winning Cream Ale Onion reduction and chef’s veg. Dessert selections are Candy Cane-Dusted Chocolate Souffle or Gingerbread Cheesecake. Dickens carolers will stroll tableside to add to the festivities on Friday and Saturday evenings. TAPS children’s menu is $9.95.

COZY UP: Stop by TAPS after a spin on the seasonal Dos Lagos Ice Skating Rink for a taste of TAPS from the Fireside for Two Menu, served in TAPS rustic bar and lounge from 7 PM nightly. Enjoy your choice of two of TAPs award-winning ales or lagers, and a signature appetizer for $14.95. Select from: Warm Crab & Artichoke Dip, Seafood Ceviche, Cajun Chicken Egg Rolls or Grilled Artichoke.

CHARITY: TAPS Fish is partnering again with The Settlement House for the holidays. Guests who bring in a $20 gift card to Ralphs will receive a TAPS Sunday Brunch Extravaganza certificate worth $32. The Settlement House is a non-profit charitable organization that provides for the temporary emergency needs of low-income families and individuals in Corona and Norco. They will use the gift cards to purchase items often in short supply at food banks. Guests may bring in Ralphs gift cards now through December 30, 2010.
