Chef Will Gilson has begun a series of pop-up restaurant experiences in Boston, serving one meal at a coffee shop and another in a furniture store. “It’s part theatrics,” he said, explaining that tablecloths and other props must be removed after each dinner, and it’s also communal, as diners share tables and conversation.
