Inspired by the diversity that comprises Los Angeles cuisine, Hyatt Regency Los Angeles International Airport (LAX), which is managed by Dallas-based Prism Hotels and Resorts, introduces three new and distinct dining concepts, unity laTM restaurant, market and bar. Incorporating the diverse and unique flavors from neighborhoods across Los Angeles, unity la menus include plates such as Drunken Noodles from Thai Town, Carne Asada from Boyle Heights, Fish Tacos from Santa Monica and Seared Scallops from the Sunset Strip.

“Food plays an important role in connecting and educating visitors in Los Angeles about the cultural richness of each community. Located at the gateway to the city, just steps away from LAX, we saw great opportunity to introduce travelers who may not be able to visit these neighborhoods during their stay, as well as locals, to the diverse flavors intrinsic to LA neighborhoods,” says Charles Fusco, executive chef at unity la. “Our team scoured LA’s neighborhoods, tasting the cuisine in each one, to create menus that introduce guests to our diverse and ethnically-rich city – from traditional Mexican dishes to Asian-inspired recipes.”

Three distinct menus – one each for the restaurant, market and bar – provide guests with options to meet their distinct schedules and moods. A seated, full-service restaurant, unity la offers breakfast and dinner. With menu items that are designed to be shared among guests, it encourages visitors to experience an assortment of menu items and the diverse flavors of Los Angeles. Initial guest favorites from the dinner menu include Pork-Belly Ramen with wood ear mushrooms and a soft-boiled egg, Chicken Mole served with a sweet potato hash, red mole, cilantro and sesame seeds, Pacific Shellfish in a tomato broth with chile de arbol, avocado and salsa bandera, and Fish Tacos featuring a lime seared rock fish topped with cabbage, radish, salsa verde and cilantro. Completing the experience, the dessert menu includes authentic delicacies such as Buñuelos with vanilla ice cream, toasted almonds and Busy Bee honey, and Merengón complete with passion fruit curd and macerated berries.

Open for lunch and dinner, the unity la bar offers a distinct menu with plates designed to be shared and enjoyed within the space’s casual environment encouraging socializing among groups and guests. Highlights from the bar’s food menu include Queso Fundido with Chorizo mixed with Asadero cheese and house-made tortilla chips, Posole with Guajilo Chile broth, hominy and Kurobuta pork, as well as a Cold Noodle Salad with Bloomsdale spinach, Shiitake mushrooms, heirloom carrots, cucumber, Thai basil and a soy ginger dressing. The bar also offers American classics, including burgers, sandwiches and flatbreads. unity la bar offers seasonal handcrafted cocktails with a focus on spirits sourced from local distilleries, including Greenbar Distillery’s organic liquors.
