Q: What pairs better with cheese, beer or wine?

A: The short answer is both, but I’ve heard an argument recently that too good to not share: Beer is actually closely related to cheese. Picture these parallels:

– Cow, sheep, goats chew grain. Breweries mill grain.

– Animal saliva adds enzymes while chewing to break down the starch in grain. Breweries denature enzymes by holding it at certain mash temps.

– Animal stomachs digest the grain. Breweries boil the mash liquid.

– Animal’s milk is fermented to make cheese. Breweries ferment the wort and make beer!

That’s a pretty simplistic view, but you get the idea. Too bad you can’t milk beer out of a goat. I’d have at least three and a strong milkin’ hand.
