It’s Passover and my wife is searching for the perfect matzoh.
In her world, the best matzoh is burnt on the edges and, as she puts it,”Actually has some taste.” This perfect matzoh goes great with butter spread over it or in matzoh brie that is fried in an egg batter. She likes hers with salt. I like mine with sugar.
Finding this matzoh was not an easy task. We usually buy it at Trader Joe’s but for some inexplicable reason, they stopped stocking it a week before Passover began. So we went to at least four other markets and tried a bunch of different brands before we stumbled on a burnt matzoh at a local kosher market.
