I grew up in Sicily and my mother and my older sisters were wonderful cooks.I spent many hours observing and learning from them. They tried to incorporate the fresh fish and vegetables of the region into their dishes.Everything was very fresh and healthy. That tradition carried over into my cooking as I follow those same practices. We started Sapori, in Newport Beach,over 22 years ago so we have obviously known some of our clients for a very long time. It’s been a great experience to see their children grow up and have children of their own. Our guests are like family to me and I treat them like they were in my own home with only the best ingredients and hospitality. I spend more of my time now in the front of the house greeting and talking with my guests, but I still pride ourselves for serving consistently high quality food. It gives me great satisfaction to serve them a healthy and delicious meal and it’s very rewarding to see them enjoying it. I attribute much of that to the success of our restaurant and we look forward to many more years to come in Newport Beach.
