Chef Charles Cho Is from South Korean American. At the age of 3 his parents decided to move to the states. He grew up in Ranch Palos Verdes CA. After graduating Palos Verdes Peninsula High School in 1999 he fantasized about joining the culinary industry. Even though his father was hesitant he helped him enroll at Le Cordon Bleu Culinary Arts School. He appreciate my father every day because his help allowed himself to find his passion early in life. Culinary school was one of the most enjoyable times of Cho’s life and after graduating he was still hungry for more. To pursue more knowledge he’s trained under Chef Kyle Connaughton, Chef Michael Kang, Chef Soerke Peters, Chef Alan Wong, Chef Ritsu Osuka, and numerous stages at Morimoto’s, Providence by Michael Cimarusti, Ink by Michael Voltaggio, Redbird by Neal Fraser, and hopefully this list continues to grow including Noma, Eleven Madison Park, and Alinea. He was lucky enough to be enlightened by these amazing chefs and would like nothing more than to cook for them at a restaurant of his own one day. As for now he is the Executive Chef at OPM restaurant and lounge in Huntington Beach CA. It will be 4 months since entering the OC realm and honestly he doesn’t know what to expect! But what he does know is that he will continue to love his job and will continue to raise the bar for himself as well as the rest of his team.
