Wilson began his culinary career at age 15 as a dishwasher at Dana Point’s iconic Chart House overlooking the harbor, quickly ascending in the ranks to head cook. Having earned his classical training from the Culinary Institute of America in New York, he embarked on a culinary career that has taken him all over California. He’s helmed the kitchens of some of Orange County’s most prestigious resorts, including the Surf and Sand Resort in Laguna Beach and The Ritz Carlton Laguna Niguel, where he served as executive chef for 13 years and assisted an elite team to open seven more across the country. Most recently, Wilson was executive chef of the Montage Laguna Beach, where he oversaw day-to-day operations for the resort’s main kitchens, creating and maintaining standards of excellence that propelled the property into one of Orange County’s premier dining destinations.
