WHAT:OnWednesday, October 8, 2014from3-5 p.m.,Fashion Island’sFIG & OLIVE Newport Beachinvites Orange County residents to an exclusive hands-on cooking class($85*)led byExecutive Chef Pascal Lorange. Chef Lorange’s refined cooking style embodies the flavors of the South of France, utilizing olive oils in place of butter and cream.During the interactive class, Chef Lorange will share his tips and tricks for preparing an autumn-inspired three-course FIG & OLIVE meal comprised of the following dishes:

  • Pumpkin Sage RavioliFree range chicken, ricotta and charmoula, pumpkin olive oil emulsion, toasted pumpkin seeds, parmesan, and aged balsamic Frantoio Olive Oil
  • Crab & Heirloom Tomato SaladJumbo lump crab, heirloom cherry tomato, garlic, cilantro, shallot, harissa, and avocado basil tapenade Picholine Olive Oil
  • Creme Brulee CheesecakeOlive oil crisp with caramelized peaches

Participants will hone their culinary skillsunder the supervision of Lorangeas they follow along step-by-step preparing each dish. Lorange will share his philosophy on cooking with olive oil as well as culinary techniques for the home cook. Afterwards, guests will toast to the afternoon with aPiscine Cocktail,composed of sparkling wine and organic strawberries, while enjoying the dishes of their labor.

ABOUT EXECUTIVE CHEF PASCAL LORANGE:

At the age of 19, Chef Lorange trained at three-star Michelin-rated Restaurant Georges Blanc in Vonnas, France, and continued to hone his craft while working as a private chef to Spanish singer Julio Iglesias and cooking for celebrities such as Oscar de la Renta, Princess Stephanie of Monaco, and the Clintons. At FIG & OLIVE, Chef Lorange finds inspiration along with founder Laurent Halasz during their yearly sojourn through Italy, Spain, and the South of France, where they discover new olive oils and local recipes to create the ingredient-driven menu for the restaurant.
