Winemakers Katie Madigan and Chris Louton and Vineyard Manager Jake Tyrrell invite guests to Taste the Fruit of St. Francis with new Reserve Tier wines at a feast of epic proportions in celebration of sustainable agriculture.

Cochon 555 is coming to Los Angeles with St. Francis Winery & Vineyards, a Certified Sustainable, family-owned California winery. This national dinner series features notable chefs who reinvent the traditional steakhouse experience. The country’s most hyper-local culinary competition, is proud to bring Private Dining Cochon “PDC,” a dinner series that celebrates source-driven chefs, prominent winemakers, and humanely certified proteins, to Los Angeles. The “Large Format Feast” campaign spotlights the growing popularity of premium cuts of heritage pork on prominent steakhouse menus. The dinner series supports the conversation about responsible farming, buying whole animal and sourcing the best naturally raised beef and pork, ultimately setting a course for a safer food system.

On Saturday, March 28th, Chef Ray Garcia of the new Broken Spanish will co-host an epic “Big Beef vs Heritage Pig” four-course dinner paired with new wines from St. Francis Winery. Both chefs are past Grand Cochon winners. The culinary experience begins with a welcome reception of reserve Prosciutto di Parma followed by a seated dinner of family-farm raised, antibiotic-free, Creekstone Duroc Pork side-by-side with Creekstone Farm Black Angus Beef. The courses will be paired with the new St. Francis Sonoma County Sauvignon Blanc and the new, upscale Reserve Tier Merlot, Cabernet Sauvignon, Zinfandel from St. Francis Winery. To close the evening, guests will enjoy a discussion of spirits featuring Hirsch and Old Potrero 18th Century from Anchor Distilling.

The teams are proud to support this celebration of responsible agriculture, perfect for wine, spirit and food lovers. Guests will also enjoy an artisan cheese course from Cochon 555 founder Brady Lowe and a special dessert course.

A young generation of winemakers, Katie Madigan and Chris Louton, and Vineyard Manager Jake Tyrrell are defining the future of Sonoma winemaking with a new vision for St. Francis wines. Proud to support this celebration of responsible agriculture, they will travel to Los Angeles from the Sonoma Valley to present these four new-release wines to a limited audience of LA’s wine and food lovers.

“Working with 2014 Grand Cochon winner Ray Garcia is exciting, but its even more exciting is that we’ll be among the first to preview Chef Garcia’s new LA destination restaurant,” says Cochon 555 founder Brady Lowe. “They are totally redefining the meat culture and taking LA dining to the next horizon. The contemporary Pan Latin approach, with large format offerings, gives a distinctive LA flavor to Private Dining Cochon.”

Following the Large Format Feast, the St. Francis winemaking team will be pouring at the Cochon 555 competition on Sunday, where five top chefs are challenged to create a winning menu from a locally raised heritage breed pig. The PDC “Large Format Feast” Series is a national dinner event series showcasing 10 of the nation’s top chefs, who are reinventing the steakhouse culture. Special thanks go to the dinner hosts, including the winemaking team of St. Francis Winery, the culinary team of Broken Spanish, Creekstone Farms, Anchor Distilling and The Cochon US Tour. Dinners like these support whole animal culture, which helps lessen the burden on small family farms.
