Fuego’s waterfront Easter Brunch is the perfect way to spend the holiday with family and friends at Hotel Maya on Sunday, April 5 from 10 a.m. to 3 p.m., along with live Latin jazz accentuated by sunshine and warm breezes on the waterfront patio.
Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

Executive Chef Victor Juarez has prepared a delicious Easter Brunch menu beginning with an assortment of Salads & Displays including the Chef’s Selection of Market Salads featuring Hearts of Palm Salad, Spring Kale Fruit Salad, Roasted Beets with pepper escabeche, cotija and pepitas, and Cannellini and Green Bean Salad; along with Cheese and Charcuterie Station, antipasto platter, deviled eggs, roasted vegetables wraps, fresh fruit, seasonal berries, and smoked salmon rolled asparagus.
The Fuego Seafood & Ceviche Station offers Fanny Bay Oysters, Jumbo Gulf Shrimp, Smoked Seafood and traditional condiments. Ceviche includes Bay Scallops, Mahi Mahi, and Steamed Shrimp with citrus cocktail sauce and aioli horseradish.
The Easter Omelet Station presents Omelets prepared to order with the choice of vegetables, meats and cheeses.
Fuego’s holiday Carving Station features a perfect Prime Rib of Beef with creamed horseradish and roasted garlic jus, and Roasted Virginia Bone In Ham with pineapple rum glazed.
Easter Brunch Hot Entrees include Fuego Eggs Benedict with spinach, Applewood smoked bacon and hollandaise; a selection of Breakfast Potatoes, Smoked Bacon, Chicken Apple Sausage and Caramelized Plantains; Lamb Chops with red mint chimichurri; Braised Maple Leave Duck Legs with herbed roasted tomatoes; Beef Barbacoa; Cornish Game Hen stuffed with paella rice; or Roasted Fillet of Salmon with saffron wine butter sauce; and Creamy Fennel Mashed Potatoes and Pickled Brussels Sprouts.
A delicious Bakeries & Breads Station offers an assortment of breads, rolls, mini pastries and pineapple upside-down cake; along with a selection of miniature desserts, petit fours, chocolate crème Brule, coconut run flan with caramel sauce, assorted mini cupcakes, creamy carrot cake and chocolate raisin bread pudding.
Easter Sunday Brunch guests will enjoy endless sparkling wine or cider, along with complimentary coffee, decaffeinated coffee, tea, juices and soft drinks.
Fuego’s Easter Brunch costs $63.00 per adult and children, 13 and older; $27.00 for children, 12 and under; Free for children 5 and under; plus tax and gratuity. An 18 percent gratuity will be added to parties of six or more.
