edo bites is the newest creation of Chef Baldi. With the 2017 opening of edo, Baldi’s aim was to recreate the love, aromas, and art of some of his favorite childhood foods and to use the café as an avenue to explore cuisine beyond the more traditional Tuscan recipes Baldi is known for.
