Fuego’s New Year’s Eve Five-Course Dinner And Party Packages

Fuego New Year’s Eve five-course dinner begins with a choice of Crema de Langosta with lobster cream soup, Spanish sherry wine, lobster meat and tarragon crème fraîche; or Little Gem Romaine Salad with za’atar crisp kale, heirloom tomato, sourdough crouton, point reyes blue cheese dressing.

Fuego’s second course features a selection of Mushrooms & Cream Toast with Chef’s selection of mushrooms, brioche toast and béchamel, soyrizo, or Vieras Aguachile with cured scallops, melon, Persian cucumber, agave, micro cilantro and fennel.

Fuego’s Intermezzo features Hibiscus Sorbet for a small, light and refreshing cleanse to the palate.

Fuego New Year’s Eve dinner entrée is:

• Wagyu Filet Mignon with charbroiled filet of beef, truffle wine sauce, mixed wild mushrooms, fingerling potatoes and roasted broccolini
• Chilean Sea Bass with chipotle black bean sauce, avocado lobster chimichurri, masa dumpling and roasted jalapeño crema
• Colorado Lamb Chop with preserved rajas poblano, caramelized onions, sweet potato purée and port mint sauce
• Grilled Artichoke Heart with lemon preserved, sea salt, cracked pepper, thyme, olive oil, red lentil hummus, crumbled feta and grilled lavosh.

A delicious Dessert features New Year’s Chocolate Indulgence with dark chocolate sabayon mousse, raspberry jam, chocolate almond cake and apricot marmalade. Guests will enjoy complimentary coffee, decaffeinated coffee or hot tea.

Fuego’s New Year’s Eve offers two five-course dinner and party packages that includes a glass of champagne and party favors. The first dinner and party package runs from 5-8 p.m. with seatings at 5:30 p.m., 6 p.m. and 6:30 p.m. The second dinner and party package begins at 9 p.m. with seating at 8 p.m., 8:30 p.m., and 9 p.m., with dinner guests having guaranteed seated viewing of the fireworks from the Queen Mary as well as a champagne toast at midnight.

Mike Vitale and the Chemicals will provide live music in Fuego throughout the evening.

Fuego’s New Year’s Eve Dinner and Party Packages costs $150.00 per person from 5-8 p.m. and $200.00 per person at 9 p.m.
