Guests will be full of comfort and joy with Fuego’s four-course Christmas Eve Dinner and Christmas Day Dinner at Hotel Maya on Sunday, December 24 from 5-10 p.m. with live music performed from 5-9 p.m. and Monday, December 25 from 12-10 p.m. with live music performed from 2-7 p.m. Fuego will also offer a special holiday buffet on Christmas Day morning until noon.

“Christmas is a special time and Fuego goes all out to make sure our restaurant and hotel guests are in the holiday spirit with great meals and music each day,” said Jeff Dieter, Director of Restaurants at Hotel Maya – a DoubleTree by Hilton. “We’ve decked Fuego out with festive decorations and lights that set the scene for Christmas cheer and joy throughout the season.”

Executive Chef Victor Juarez has prepared a delicious four-course homemade Christmas Eve Dinner and Christmas Day Dinner meal that begins with Pumpkin Butternut Soup with candied jalapeno bacon and whipped crème fraîche.

Fuego’s second course is a selection of Heirloom Apple and Candied Walnut Salad with dried cherries, zinfandel citrus vinaigrette, wild greens and feta cheese; or Heirloom Beet Salad with butter lettuce, heirloom beets, roasted corn, butternut squash, candied pepitas and cilantro guajillo vinaigrette.

Guests will enjoy a holiday entree selection of Roasted Turkey Breast with mushrooms, leeks and brioche stuffing, orange peels cranberry compote, roasted garlic mashed potatoes and classic turkey gravy; Whole Roasted Center Cut Rib Eye with Yorkshire pudding, lardon fried Brussels sprouts, beef jus and horseradish cream; Roast Herb Rack of Lamb with herb crusted lamb, mint porto glaze, Yukon potato puree and glazed heirloom carrots; or Pistachio Crusted Chilean Seabass with añejo lime buerre blanc, boniato purée, and parsnips arugula lobster salad.

Fuego’s fourth course features delicious desserts with a selection Chocolate Yule log with Tahitian vanilla ice cream or Apple Pecan Caramel Cheesecake with cinnamon orange cream and dried cranberries.

Christmas Eve and Christmas Day dinner guests will also enjoy complimentary coffee, decaffeinated coffee, tea, juice and soft drinks.
