Fuego features a four-course, prix fixe feast for its festive Thanksgiving holiday meal with all the trimmings at Hotel Maya on Thursday, November 22 from 11 a.m. to 9 p.m. Live music will be played by acoustic guitarist Danny Maika from 4-8 p.m.

Guests will also be able to order from Fuego’s al la carte menu throughout the day.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

“This year’s Thanksgiving menu reflects the traditional flavors and tastes of the holiday with a bit of a Latin American flair,” said Jason Cervantes, Director of Restaurants at Hotel Maya – a DoubleTree by Hilton. “Fuego’s seaside patio also provides guests with sensational views while dining, sipping on refreshing drinks, listening to live music or enjoying the wonderful weather.”

Executive Chef Victor Juarez’s Thanksgiving Feast begins with Butternut Squash Soup with roasted candied walnuts and truffle cream.

The second course is a selection of Heirloom Apple and Candied Walnut Salad with baby green leaves, dried cherries, roasted acorn, Panela cheese and zinfandel citrus vinaigrette; or Ember Charred Beets with little gem lettuce, heirloom beets, whipped goat cheese, roasted corn and guajillo vinaigrette.

Fuego’s Thanksgiving Entrées are ordered from the server and include a choice of Mary’s Farms Roast Turkey with shallot and sage pan gravy, Yukon gold potato purée, blue lake beans, brioche mushroom dressing and orange cranberry compote; Slow Roasted Prime Rib with creamed horseradish, sweet garlic demi-glace, Dungeness crab and potato purée; Roast Herbed Rack of Lamb with herbed-crusted Colorado lamb, Dijon pepper sauce, charred rapini, cipollini onions and roasted garlic mashed potatoes; or Fillet of Salmon with honey ancho chili glaze, spicy black bean sauce, sautéed garlic spinach and jalapeño crema.

Fuego’s Thanksgiving desserts are a choice of Pistachio Pumpkin Cheesecake with cranberries and apricot sauce or Chocolate Trio with bittersweet chocolate, milk chocolate and white chocolate topped with ganache icing and drizzled with raspberry sauce.

Thanksgiving guests will also enjoy complimentary coffee, decaffeinated coffee and tea.
