Beginning May 1,Venga Venga and Cantina and Tequila Bar in Otay Ranch Town Center will introduce the restaurant’s 1st Annual Guacamole Festival in celebration of the staple dish’s many regional preparations. The following guacamoles have been crafted by Executive Chef Richard Sandoval to represent his favorite Mexican selections and will be available for tableside preparations through June 15.

-Yucatan: Reigning from the homeland of the Mayans, this Yucatan inspired guacamole provides the perfect combination of spicy and cool. This guacamole includes a combination of fresh Shrimp Ceviche and Spicy Habanero Salsa, mixed with generous squeezes of fresh orange and lime juice and a sprinkling of sea salt.

-Baja: In line with the tropical ingredients of Baja California, this guacamole is blessed with the flavors of fresh Kiwi, Strawberry, Mango, Mint, Jicama and Chile Arbol, all of which are gracefully folded into the creamy avocado mixture before being sprinkled with lime juice and sea salt.

-Norteno: The unique culinary traditions of Mexico’s Northern region come alive in the Norteno guacamole, which features Chicharron and Pickled Onion. The addition of salsa fresca, fresh lime juice and sea salt are sure to leave taste buds buzzing.

-Sur: Perhaps the most adventurous of the guacamoles, the South Mexican inspired Sur guacamole includes Grasshoppers, Tomatillo, Cojita Cheese, Onion, and Chile Cascabel. Did we mention grasshoppers?

-Pacifico: An unexpected twist on the classic recipe, the Pacific guacamole incorporates unique flavors including Grilled Beet, Roasted Walnut, Queso Fresco and citrus-chipotle salt.
