Latin Brunch Series

Passports are not needed on this Latin American tour, simply pack your taste buds and culinary curiosity as Fuego sets course for a 12-country Latin Brunch Series beginning with Cuba at Hotel Maya on Sunday, January 15 from 11 a.m. to 2 p.m. Live Latin music will accompany each Latin brunch.

And if one day in port is not enough, Fuego will offer a food and drink special each month corresponding with the featured country. Throughout January guests will enjoy the Cuban special Lechón Asado with pull pork braised with orange mojo that is served with Moros y Cristianos, a mixture of black bean and rice, along with fried plantains, and Coconut Flan. The Cuban drink of the month is a refreshing Cuba Libre.

“The Latin Brunch series provides an opportunity for guests and locals to taste a wide variety of Latin American cuisine each month without having to leave Long Beach,” said Kristi Allen, Vice President of Hotel Operations at Hotel Maya – a Doubletree by Hilton. “The Chef has also created a special dish to be enjoyed each day that represents the culinary tastes of the respective country.”

The Latin America Brunch series continues to Argentina on February 19, Costa Rica on March 19, Columbia on April 23, Mexico on May 7, El Salvador on June 25, Brazil on July 23, Chile on August 20, Venezuela on September 17, Guatemala on October 29, Peru on November 19, and Nicaragua on December 17.

For January, Executive Chef Victor Juarez has prepared a culinary tour stop in Cuba that begins with sensational Soups and Salads to include Ensalada Russa Salad with beets and Potatoes, Ensalada De Pollo, Mushroom Escabeche, Hearts of Palm Salad, Macaroni Salad and Caesar Salad. In addition to Anti-Pasto, Fruit Salad, Domestic and Imported Cheeses, Smoked Salmon with classic condiments, Shrimp Cocktail, Cocktail Mixto, Ceviche de Cancrejo, and Mariquitas.

The Fuego Street Fare features a fresh selection of Tostones Rellenos, Empanadas, Yucca con mojo caliente, Caramelized Sweet Plantains, Escabeche, and fresh homemade salsas.

The Cuba Brunch entrée is ordered through the server and includes one selection of Fried Eggs and Beef Stew Hash with classic Cuban shredded beef stewed, tomato, peppers, boniato hash, and Maduros, aka Fried Plantains; Cubano with mojo citrus braised pork, black forest ham, melted Swiss cheese, pickles, mustard, and mariquitas de platano verde; Lechón Asado with slow roasted marinated pulled pork, classic sour orange mojo, smashed yuca, black beans and vigorón slaw; Vaca Frita aka Stir-fry Shredded Beef with tender braised and crisped-shredded flank steak, roasted onions, bisteak tomatoes, white rice and caramelized plantains; Ropa Vieja with braised beef in a Cuban tomato base sauce, garlic, onions, peppers, steamed white rice, vigorón slaw and manchego crema; Pargo Rojo with pan seared whole red snapper, mojo galiente, maduros, and tomato and cucumber salad; Salmon a la Parilla with grilled salmon marinated in mojo sauce; brown rice, plantains, onion and cilantro salad; or Lubina en Salsa Verde with baked sea bass with shrimp, clams, herbs and vegetables.

Delicious Desserts include Dulce de Papaya con Queso Crema, Tres Leches Cake, Arroz con Leche, Coconut Rum Flan with caramel sauce; along with assorted Mini Empanadas, Vanilla Raisin Bread Pudding, Coffee Merenque Cookies and Aguas Frescas.

The Latin Brunch Series – Cuba costs $55.00 per adult and children, 13 and older; $27.50 for children, 12 and under; kids 3 and under feast for free; plus tax and gratuity.

For an additional $10, guests will enjoy endless sparkling wine or mimosas. Complimentary glass of sparkling wine or cider, coffee, decaffeinated coffee, tea, juice or soft drinks will be served.
