Catch the Colombia culinary connection as Fuego at Hotel Maya continues its 12-country Latin American 2017 tour on Sunday, April 23 from 11 a.m. to 2 p.m. Fuego’s authentic Colombia dishes will be accentuated by live Latin music with The Sounds of Colombia. Free Latin dance demonstrations including Cumbia will be presented during brunch.

Fuego guests looking for an extended Colombia experience will also enjoy the daily offerings in April of a Colombia specialty Picada, and one of the most traditional desserts in Colombia Coconut Flan. The Colombia drink of the month is a refreshing Guava Mai Tai.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

The Latin American Brunch series continues to Mexico on May 7, El Salvador on June 25, Brazil on July 23, Chile on August 20, Venezuela on September 17, Guatemala on October 29, Peru on November 19, and Nicaragua on December 17. The Latin American Brunch series’ first three stops were Cuba in January, Argentina in February and Costa Rica in March.

For April, Executive Chef Victor Juarez has prepared a culinary tour stop in Colombia that begins with sensational Soups and Salads featuring Sancocho de Gallina a vegetable chicken stew; along with Salpicon; Ensalada Russa a beet and potato salad; Hearts of Palm Salad; Tuna and Cabbage; Caesar Salad; Butternut Squash and Sweet Potato Salad. In addition to domestic and imported cheeses, sliced fresh fruits, shrimp cocktail and cocktail mixto.

Fuego’s Colombia Arepas station includes Crispy Pork Belly Rinds, Chorizo, Cheese, Criollo Sauce, Cabbage Escabeche and fresh homemade salsas.

Traditional Colombia entrees are ordered from the server and include a choice of Fuego Eggs Benedict with two poached eggs, sautéed spinach, applewood smoked bacon, English muffins, hollandaise and oven roasted tomato; Poached Eggs in Creole Sauce with grilled chorizo, poached eggs, oven roasted potatoes, fried plantain, avocado and arepa; Pan dulce French Toast with strawberry cream stacked brioche toast, candied pecans, La Chera caramel sauce and whipped cream; Picada with Fried Eggs with morcilla sausage, chorizo, grilled skirt steak, pork belly rinds, white corn tortillas and fried green plantains; Fillet of Salmon with pan seared salmon, tangerine, avocado salsa, patacones and cabbage salad; Pargo Rojo with pan seared whole red snapper, green plantains, cabbage salad, tomato and cucumber; Langostinos Apanados with breaded jumbo gulf shrimp, creole sauce and papas bravas; orMaine Lobster with whole Maine lobster, curry coconut sauce, white rice and cabbage escabeche ­– for an additional $10.

Delicious Colombia desserts offer Tres Leches Cake, Natas with Pudding and Egg Custard, Coconut Rum Flan with Caramel Sauce, Vanilla Raisin Bread Pudding, Empanadas de Leche Y Pina, Batidos de Agua Sweet Guava, Mango and Papaya, along with an assortment of mini pastries and cookies.

The Latin American Brunch Series – Colombia costs $55.00 per adult and children, 13 and older; $27.50 for children, 12 and under; kids 5 and under feast for free; plus tax and gratuity.
