FIG & OLIVE’s Paella del Mar ($32) is comprised of black tiger shrimp, sea scallops, calamari, mussels and saffron rice with chicken, green peas, red bell pepper, artichoke, saffron aioli, pimento, oregano, and topped with Hojiblanca Olive Oil.

Historically, there are three types of paella — Valencian paella, seafood paella, and mixed paella. FIG & OLIVE’s paella is a true version of paella mixta because it incorporates both seafood and chicken. On the Mediterranean coast, Valencians used seafood instead of meat and beans to make paella. Later, however, Spaniards living outside of Valencia combined seafood with meat from land animals and mixed paella was born.
