Fuego at Hotel Maya rings in 2020 with two delicious five-course dinners and party packages on Tuesday, December 31 from 5-8 p.m. and 9 p.m. Guests will also enjoy a spectacular canopy of fireworks from the Queen Mary at midnight.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

Fuego’s New Year’s Eve Five-Course Dinner And Party Packages:

Fuego’s New Year’s Eve five-course dinner begins with a choice of Crema de Langostino with Maine lobster, braised endive and crème fraîche; or Smoked Aubergine with eggplant, chermoula, heirloom tomatoes, burrata cheese, EVOO and charcoal toast.

Fuego’s second course features a selection of Little Gem Caesar Salad with Parmesan-reggiano tuile, white anchovies, oven dried tomatoes and focaccia crouton; or Vieras with pan seared jumbo scallops, strawberry gastrique and fennel-braised agave.

Fuego’s Intermezzo features Hibiscus Sorbet for a small, light and refreshing cleanse to the palate.

Fuego’s New Year’s Eve dinner entrée is a selection of Wagyu Filet Mignon with char filet of beef, truffle wine sauce, hen of the wood mushrooms, herbed braised potatoes and asparagus; Chilean Sea Bass with mole blanco, chanterelle mushrooms, heirloom potatoes and oven dried tomatoes; Maple Leaf Duck with roasted duck breast, raspberry port sauce, leek fondue, potato cake and kumquat compote; or Grilled Artichoke with lemon preserved, sea salt, cracked pepper, thyme, olive oil, red lentil hummus, feta cheese and lavash crumbled.

New Year’s 2020 Dessert includes Chocolate Tower Cake with layers of liquor scented almond sponge, coffee butter cream, valrhona chocolate ganache and wild berries.

Guests will enjoy complimentary coffee, decaffeinated coffee or hot tea.

Fuego’s New Year’s Eve 2020 offers two five-course dinners and party packages that include a glass of champagne and party favors. The first dinner and party package runs from 5-8 p.m. with seating at 5 p.m., 5:30 p.m., 6 p.m. and 6:30 p.m. The second dinner and party package begins at 9 p.m. with seating at 9 p.m., 9:30 p.m. and 10 p.m., with dinner guests having guaranteed seated viewing of the spectacular fireworks from the Queen Mary as well as a champagne toast at midnight. The late-evening package also includes live entertainment by Mike Vitale and the Chemicals.
