The meal begins with an amuse-bouche of Shigoku Oyster on the Half Shell and next is Kampachi Crudo with romanesco, pearl onion, green strawberry, kaluga royal caviar and hearts of palm. The third course is Roulade of California Petrale Sole accompanied by marinated white asparagus, dashi-poached turnips and hon shimeji followed by Alina Duck Breast with swiss chard, sunchoke, morel mushroom and hazelnut. This remarkable dinner ends with a Whipped Brie course and then Ivory Chocolate Mille-Feuille.
