Executive Chef Jeffrey Boullt grew up in the South and worked under Chef Tory McPhail at the renowned Commander’s Palace in New Orleans, and can’t wait to bring a little taste of one NOLA to OC.
Chef Boullt has prepared a special menu for the occasion, which will be available from Thursday, February 12 to Tuesday, February 17 (the Fat Tuesday celebration will include live jazz!), and Bar Director Mike West has created a themed cocktail called The Last Day of Sin. A few of the dishes include MasaFried Frog Legs with remoulade and scallions;Seared Foie Gras withPain Perdu, Quince, Hazelnuts, Foie Ganache;Sweet Tea Lacquered Gulf Fish with charred okra, pineapple, smoky crawfish consommeand nasturtium and more. The Mardi Gras/Last Day of Sin cocktail is made with Foie Gras infused Cognac, Armagnac, Apple Cider Shrub, Herbsaint Rinse with Dried Apricot Garnish.
