Easter Champagne Brunch in the Elizabeth Ballroom

This is an extravagant celebratory brunch to be enjoyed with favorite beverages and, of course, champagne.

Guests are offered everyone’s favorite breakfast selections including:
Mini Pastries, Made-to-Order Omelettes, Quiche, Scrambled Eggs, Belgian Waffles and Made-to-Order Pancakes. In addition, there are Raw Shellfish, Gravlax and Smoked White Fish and Smoked Trout, Made-to-Order Potato Latkes, Dim Sum and Sushi, Seasonal Salads includingCaesar, Baby Gem Lettuce and Local Strawberry and Beet Salad. There will be an impressive selection of Cheeses & Charcuterie, as well as a Carving Station serving Rosemary and Garlic-Rubbed Leg of Lamb, Slow-Roasted Prime Rib-eye and Cantonese Whole Roasted Pork Belly. Brunch entrees includeRoasted Local Bass, Chicken Supreme, Traditional Spanish Paella and more plus accompaniments and sides. Sweet Endings to this amazing Easter spread include Lemon Curd Meringue, Caramel Apple Pie, Cheesecake, Cream Puffsand more. Plus there is a Candy Station, and guests may decorate Chocolate Eggs and Cadbury Cream Eggs. The Children’s Buffet tempts young Easter guests with Mini Corn Dogs, Grilled Cheese Fingers, Triple Decker Peanut Butter & Jelly Sandwiches and more, along with Cookies, Brownies, Cupcakesand Candy Eggs.

Chef Matthew Sramek and his culinary team have created a Three-Course Tasting Menu for seasonal Brunch enjoyment.

Appetizer selections include choices such as:
Catalan Style Shrimp, Greek Yogurt Parfait and Spring Asparagus Veloute. Entree options are French Toast Brûlee; Mary’s Free Range Chicken with wild mushrooms, peas, pancetta and Meyer lemon chicken jus; Seared Striped Bass with artichoke marnière, baby fennel and orange salad; and other temptations. For dessert: Easter Trio – Carrot Cake Verrine, Meyer Lemon Meringue Tartlette and Milk Chocolate and Mango Carre.Children will delight in a buffet created especially for them that will include items such as Mac & Cheese, Grilled Chicken Tenders, Fresh Fruits and Berries and desserts such as Brownie Bites and Double Chocolate Chip Cookies.

Chef Sramek’s Three-Course Easter Dinner begins with choices like:
BabyIceberg Wedge, Beef Tenderloin Carpaccio and English Pea Risotto. Next guests may select Slow Roasted Pork Chop with garnet yam croquette, rainbow chard and anise-bourbon glaze; Roasted Beef Tenderloin with Red Bliss potato hash, blue cheese and bordelaise sauce; or Sauteed Potato Gnocchi with braised lamb ragout, fava beans and pecorino, among other entrees.

For Dessert: Easter Trio: Carrot Cake Verrine, Meyer Lemon Meringue Tartlette and Milk Chocolate and Mango Carre.

The Clubhouse Grill Brunch on Easter and Live Music on the Patio

Available from 7 a.m. to 4 p.m.

At the casual and relaxing The Clubhouse Grill, Chef de Cuisine Joshua Dorfner offers an à la carte brunch menu with many selections, as well as custom Bloody Marys and other thirst-quenching libations. From White Shrimp Quesadilla and Old-Fashioned Buttermilk Pancakes to Fried Chicken Cobb Salad, Grilled Fish Tacos and Cola-Brined Pork Loin on a ciabatta bun, the menu is full of tempting choices.

Afternoon Tea in the Library

Served from 2 to 4 p.m.

An elegant way to wile away a very pleasant Easter afternoon is tea at The Grand Del Mar. Tea lovers can enjoy Grand: three courses including selections such as Tea Sandwiches, Scones and French Pastries with a choice of fine tea for $40 per person, exclusive of tax and tip or choose

Royal offering three courses, choice of tea and choice of wine by the glass such as bubbly Sorelle Bronca, Brut, Prosecco from Veneto, Italy, for $50 per person, exclusive of tax and gratuity.

The Grand Hunt & Family Activities on the Aria Lawn

Happening from 11 a.m. to 2 p.m.

This yearly event at The Grand Del Mar is a family favorite. The Easter Egg Hunt begins at 12:30 p.m. Baskets are provided, and there are plenty of entertaining diversions to ensure a memorable event for everyone. The event is complimentary to Easter diners at the resort and resort guests.
