Fuego at Hotel Maya presents a triple shot of love with Valentine’s Day Dinner with a four course, prix fixe menu on Saturday, February 14 from 5-11 p.m. and Valentine’s Brunch on Sunday, February 15 from 11 a.m. to 2 p.m. Live Latin Jazz will accompany both Valentine’s celebrations.

As part of its Fuego 2015 Latin Culinary and Mixology series, Fuego will also be presenting a special Valentine’s Day culinary class highlighting the Mayan’s discovery of cocoa for cooking and the universal love for chocolate on Saturday, February 14 from 11 a.m. to 1 p.m.

Guests will focus on the preparation of chocolate items that will culminate in a three-course chocolate lunch beginning with Arugula and Prosciutto, Chocolate Infused with strawberries, chocolate candied walnuts and balsamic chocolate dressing. The entree includes Chocolate Mole Chicken with poached breast of chicken breast, chocolate mole negro, roasted sesame seeds, steamed jasmine rice and grilled calabacitas. Dessert is Banana and Chocolate Crêpes with vanilla custard, vehrona chocolate, raspberry couli and vanilla gelato. The Mayan Chocolate for Couples class is $25 per person and is limited to 20 guests.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique romantic seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

Valentine’s Day Dinner

Fuego’s Valentine’s Day four-course, prix fixe dinner begins with a choice of Amuse Bouche or Fanny Bay Oyster Shooter with red velvet champagne granite.

Fuego’s second course is a choice of Trio of Heirloom Tomato Soup with jumbo lump crab salad, avocado, and aji amarillo aioli; or Saffron Butter Jumbo Gulf Shrimp with sweet corn polenta flan, roasted macadamia nut fried beet chips, and baby wild arugula.

The Sweetheart Entree includes a selection of Prime Filet & Australian Lobster Duo with charbroiled filet of beef, sweet butter poached lobster tail, truffled bordelaise, gnocchi potatoes, blistered heirloom tomatoes, and crispy iberico jamon; Pan-Roasted Colorado Lamb Chops with porto mint emulsion, cauliflower and celery root puree, sweet onion marmalade and braised heirloom potatoes; Honey and Pomegranate Glazed Salmon with cous cous and tapioca pearls, corn scented broth and edible rose petals; or Panko Encrusted Ravioli with cream rainbow Swiss chard, braised fennel, and shaved manchego.

Fuego’s Sweet Ending desserts include a choice of Cupid Chocolate Heart with valrhona chocolate mouse, Tahitian vanilla crème brûlee, liquor scented chocolate cake, and raspberry coulis or Pistachio Chocolate Cover Strawberries.

Guests will enjoy complimentary coffee, decaffeinated coffee, tea, juice or soft drinks.

Fuego Valentine’s Day Dinner runs from 5-11 p.m. and is a prix fixe menu at $95 per person, plus tax and gratuity. An 18 percent gratuity will be added to parties of six or more.

Valentine’s Sunday Brunch

Fuego’s Valentine’s Sunday brunch begins with Salads and Displays featuring Wild Berry and Kale salad, Brussels Sprout Caesar salad, Roasted Beet salad with peppers escabeche, cotija and pepitas, Cuban-style Macaroni salad, Antipasto salad, Sea Food Orzo, Caprese with burrata cheese, Smoked Salmon with classic condiments, fresh fruit and seasonal berries, as well as Cheese and Charcuterie Station.

Fuego’s famous Seafood, Omelet and Carving Stations include Gulf Shrimp and Fanny Bay Oysters with classic cocktail sauce and herb remoulade, along with assorted Ceviche featuring bay scallops, mahi mahi and shrimp; Omelets and Eggs prepared to order with choice of meat, vegetable and cheese; and Blackberry Crêpes with crème en glaise; and Prime Rib of Beef with cream horseradish, sweet garlic au jus, mini brioche and caramelized sweet plantains.

Valentine’s Sunday Brunch entrees include a selection of Fuego Eggs Benedict with shaved black forest ham and hollandaise sauce; Leek and Black Truffle Quiche with applewood smoked bacon and breakfast roasted potatoes; Pomegranate Glaze Salmon with Cornish game hen and seafood paella; or Roasted Chicken, Spinach and Artichoke Casserole with Yukon potato puree and spring vegetables.

Sweet treats include mini artesian baguettes and assorted mini Breakfast Pastries, along with a selection of miniature desserts, crème brule, Parisian macaroons, chocolate eclairs, Valentine’s cup cakes and sugar cookies, grand marnier cream puffs, sugar doughnuts and pistachio chocolate covered strawberries.

Valentine’s Sunday Brunch guests will enjoy endless sparkling wine or cider, along with coffee, decaffeinated coffee, tea, juice and soft drinks.
