Ingredients:

Pastry Dough
1 1/2C Flour
1/2 t Salt
1 T Sugar
4 T Shortening
1 Egg
3 T Dry cooking wine
1 Guava paste package
1 Cream cheese package/box
Oil suitable for deep frying
Powdered sugar for sprinkling on empanadas (optional)

Directions:

  1. Sift the flour, salt and sugar.Add the shortening and cut it with a pastry dough blender until it turns into a crumbly texture.Dig a hole into the flour in the middle of the bowl.Pour the beaten egg and wine into the center.Mix the egg and wine mixture in a circular motion into the surrounding flour until it is all unified.
  2. Try to roll the dough as thinly as possible.Cut about a 1/4 inch slice of guava paste and an equal slice of cream cheese and place them in the center of the half closest to you. Fold the back half over the filling and seal the dough by pressing down on the border. Trim the ends, take a fork to the border to create a crinkled seal.Place the finished empanada on a floured surface.
  3. Heat cooking oil until it is about 375 degrees and fry the empanadas (don’t crowd the empanadas) until they are golden brown. Best served immediately.
