Lime Goat Cheese Berry Tart
Ingredients:
Ingredients for Crust:
1/2 C Almonds
1/2 t Cinnamon
1 Pinch Salt
1 C Dates – pitted
Ingredients for filling:
5.5 oz Goat cheese
1/4 C Confectioners’ sugar
1 C Greek yogurt
1 T Lime juice
1 t Lime zest
1 T Honey
1 C Berries
Directions:
- Method for pie crust:
- 1. Place almonds and cinnamon in food processor and pulse until the mixture resembles coarse meal.
- 2. Add the dates and process until the mixture comes together into a dough.
- 3. Divide the dough into 2 equal pieces and press evenly into greased 4″ tart pans.
- 4. Bake for 12 minutes at 350ºF.
- 5. Remove tart
- Method for filling: 1. Sift sugar to remove any lumps.
- 2. In a stand mixer beat the goat cheese and the sugar until light on medium high speed.
- 3. Incorporate yogurt on slow speed and then beat on medium high speed.
- 4. Incorporate lime juice, lime zest and honey on slow speed.
- Method:
- 1. Pour filling mix into tart shells & refrigerate until firm.
- 2. Cover with berries of choice.
