Marinated Cucumber and Cherry Tomato Salad
Fresh cut cucumbers and cherry tomatoes salad, served chilled.
Ingredients:
3 Medium Cucumbers – peeled, sliced 1/4″ thick
1lb Cherry tomato – cut in half
1 Medium Red onion – sliced, separated into rings (optional)
1/2 C Red wine vinegar
1/4 C Sugar
1 C Water
1/4 C Oil
Sea salt and Fresh ground pepper
Directions:
- Combine ingredients in a large bowl and mix well.
- Refrigerate at least 2 hours before serving so the flavors have a chance to blend.
