Molokai Venison Bolognese Sauce

Savor a special, delicious flavor of Molokai

Ingredients:

SET 1
1/3 C Butter
1/4 C Olive oil
1 C Onion – chopped
1 C Celery
1 C Carrots – chopped
1 1/2 T Garlic – minced
1 C Small Kine Farms, crimini mushrooms – chopped

SET 2
1 lb Pork butt – ground
1 lb Molokai Venison – ground

SET 3
40 oz San Marzano tomatoes – chopped
1 C Heavy cream
1/2 t Red chili flakes
3 T Tomato paste
1 Can Canned fire roasted red peppers – chopped
1 C Red wine
2 t Fresh Rosemary – chopped
1/2 t Black pepper
1 T Salt
1/2 t Oregano – dried
1/2 t Thyme – dried

Directions:

  1. SET 1. Saute
  2. SET 2. Saute the meat , don’t break it too small & cook through.
  3. SET 3. Add the remainder of the ingredients & bring to a boil & reduce heat to a simmer.
  4. Simmer it covered for 30-40 minutes.
  5. Adjust for salt & pepper.
  6. Serve with your favorite noodle, I love pappardelle for this but tagliatelle, fettuccine or even a tubular pasta like rigatoni would be great.
