Quinoa Pomegranate Salad

Quinoa Pomegranate Salad taste great. From dinner recipes, budget menus and healthy diet selections, you’ll easily find any recipe you need.

Ingredients:

2 C Quinoa or heirloom red rice – cooked and cooled
1/2 C Pomegranate seeds
1/2 C Basil – packed
1/4 C Mint – packed
1/2 Red onion – diced
Juice from 2 limes + zest
1 T White balsamic
Salt – to taste

Directions:

  1. Toss quinoa with pomegranate, mint, basil and onion. Whisk together balsamic, lime juice, zest and salt. Drizzle over salad. Serve immediately or chill in refrigerator.
