Salsa Ranchera
Chef Marco Zapien offers up his family favorite Salsa recipe.
Ingredients:
2 oz Olive oil
3 Tomatoes – diced small
1/2 Yellow onion – diced small
1 Green bell pepper – diced small
1 Chipotle pepper – chopped finely
1 Clove garlic – minced
1/4 C Cilantro – chopped
1/2 C Chicken stock
Salt and Pepper to taste
Directions:
- In a sauté pan, heat the olive oil. Add the garlic, tomatoes, onion, bell pepper and chipotle
- pepper.
- Cook until vegetables are tender.
- Add chicken stock and chopped cilantro.
- Reduce heat and simmer until veggies break down and reach a salsa consistency.
