Southern Fried Chicken Sandwich
Ingredients:
FRIED CHICKEN
40 lbs chicken sliced into 6 oz portions
Marinated in 3/4 gallon of buttermilk
1 cup of our secret “Burnt Spice” mix
Chicken is then deep fried, after being battered in a mixture of flour/spice mix.
HONEY SRIRACHA
5 lbs of locally sourced honey*
1 bottle of sriracha
1 spoon of crushed pink peppercorns
Gravy
3 lbs butter
3 lbs flour
3 spoons of cracked black pepper
3 gallons of milk
3 spoons of garlic powder
3 spoons of onion powder
3 spoons of chicken base
4 oz of tobasco
Salt to taste
BISCUIT
6.5 lb flour
3 lbs butter
5 oz salt
7.5 oz baking powder
3/4 gallon of buttermilk
1 egg for egg wash
GARLIC MASHED POTATOES
1.5 lbs of peel potatoes
1 lb of butter
1/4 gallon of heavy cream
1 spoon of garlic powder
1 teaspoon of white pepper
Salt to taste
Directions:
- FRIED CHICKEN
- Chicken is then deep fried, after being battered in a mixture of flour/spice mix.
- BISCUIT
- Roll out, punch out, egg wash, bake for 12 mins. Rotate, bake for 5 more minutes.
- GARLIC MASHED POTATOES
- Boil potatoes, drain them and run through a ricer.
- Gradually add heavy cream/butter mixture and fold until reached desired consistency.
- Add salt to taste.
