Spaghettini Al Pomodori
Pasta, veggies, and white wine in one excellent Italian dish.
Ingredients:
4 oz Spaghettini pasta
1 oz Extra virgin olive oil
2 oz Dried fresh tomatoes julienne
2 oz Asparagus – diced
1 oz Pecorino cheese – grated
1 oz White wine
1 oz Vegetable broth
1 oz Butter
2 Basil leaf
1/2 oz Garlic – chopped
Directions:
- Place spaghetti in boiling water and allow to cook
- Sauté the olive oil, garlic, and julienne dried tomatoes
- Add white wine, bring to a sizzle and allow to evaporate
- Add the vegetables, broth, and butter to emulsify
- When pasta is ready, strain and toss into the sauce sauté pan with pecorino cheese and basil
- Plate and serve
