1/2 oz Corn Oil
4 oz Thai Marinated Duck Meat

Ingredients:

Thai Sauce
1/2 C Soy Sauce
2 T Peanut Oil
1/2 t Toasted Sesame Oil
1/2 C Molasses

Directions:

  1. Thai Sauce:
  2. Combine all ingredients and blend in a food processor until well blended.
  3. Marinade:
  4. Place pulled duck meat into a mixing bowl.
  5. Pull apart any large chunks of duck meat.
  6. The target size of the chunks should be no more than 1 inch wide by 2-3 inches long.
  7. Measure Thai sauce and add the duck meat.
  8. Toss to coat each piece of duck meat.
  9. Vinaigrette:
  10. Measure all ingredients into a mixing bowl except for the peanut oil.
  11. Whisk to incorporate making sure that the sugar dissolves.
  12. Slowly add the peanut oil in a thin stream, using a stick blender to quickly emulsify the dressing.
  13. Note: This dressing will have some separation the longer it sits.
  14. Be sure to stir frequently to re-emulsify.
  15. Sliders:
  16. Place oil in skillet and Thai marinated duck meat in skillet.
  17. Allow to cook for approximately 1 minute or until the pulled duck meat is hot and begins to brown.
  18. Remove skillet from heat, add hoisin sauce and toss to coat the meat.
  19. To Assemble Duck Sliders:
  20. Build in the order of ingredients for "Assembled Duck Sliders."
  21. Cap with the top of the slider bun and secure with a bamboo skewer.
