Veggie Muffuletta
Veggie Muffletta is a specialty dish of Chef Jeremy Cantwell at the House of Blues in Anaheim
Ingredients:
5 lb Green olives
6 C Kalamata olives – pitted
96 oz Giardiniera
3/4 C Capers
1 C Garlic – peeled & minced
1/4 C Celery – sliced thinly (less than 1/8 inch) Parsley – chopped
8 oz Parsley
3 T Oregano
2 T Crushed red pepper
2 C Red wine vinegar
1/2 C Scallions
2 T Pepper – black, coarse
128 oz Extra virgin olive oil
6 oz Roasted peppers – 1/4 inch diced Leidenhiemer’s French bread
Directions:
- Drain and crush the olives, giardiniera and capers
- Combine all of the ingredients except the olive oil and let stand for 20 minutes Mix the ingredients again, then add the olive oil and combine
- Add to Leidenhiemer’s French bread and enjoy!
