Hilton Austin and Finn and Porter Announces New Executive Chef Peter Maffei

Hilton Austin today announced the promotion of Chef Peter Maffei to executive chef of Finn and Porter. The newly appointed executive chef is a graduate of the prestigious Culinary Institute of America and has experience working in some of the best kitchens in New York City. He began his career over fourteen years ago at Del Frisco’s Double Eagle Steakhouse, Fredericks and Zoe. He moved to Austin four years ago, where he traded New York’s famous Union Square farmers markets for great local Texas produce. “I like to capture the simplicity of the dish by developing vibrant flavors and focusing on great local ingredients. Local ingredients are the key to my creativity,” said Peter Maffei, Executive Chef.

“Chef Peter is a wonderful addition to Finn and Porter because of his passion for putting the best dish in front of our guests every time and the presence he has welcoming guests to experience the restaurant,” said Jennifer Gomez, general manager Finn and Porter. Under his guidance Finn and Porter is focused on local ingredients and using those ingredients to reinvent Modern American Cuisine. Outside of elevating the culinary experience, he also has a passion for cultivating the guest experience. It is not uncommon for him to pay a visit to welcome new diners to Finn and Porter or thank loyal customers for their return.

Executive Chef Peter Maffei joins the ranks of Chef Triet Huynh, sushi chef of Finn and Porter. Chef Huynh does not limit himself to traditional sushi ingredients and he is now famous for his Sea Dragon, Gauguin and Tomato Mozzarella rolls. Chef Huynh continues his tradition of offering delicious and one of a kind sushi that will amaze even the most seasoned sushi lover.
