Mendocino Farms “House Smoked Pastrami Project”

mendocinoFarmsOn Monday, August 11,Mendocino Farms, the recently opened gourmet fast-casual eatery on Costa Mesa’s 17thStreet, will bring their signaturehand-crafted pastramisandwich, lovingly dubbed “Our House Smoked Pastrami Project,”to Orange County.Created in collaboration with Mendocino Farms team and LA-basedUgly Drum BBQChefs Erick Black and Joe Marcos, the 12-hour pecan wood-smoked meat was served on Drago Bakery Rye with Creamy Apple Cole Slaw and a side of Moppin’ Mustard Sauce for $12.95, with the choice to add Baby Swiss for $1. First introduced at Mendocino Farms’ Los Angeles locations earlier this year, the artisan sandwich will now be available at the Costa Mesa restaurant for a limited time.

Ugly Drum BBQ’s Black and Marcos, who have collectively worked in some LA’s best restaurants including Campanile, Osteria Mozza, and the Spice Table, started Ugly Drum together, offering “small batch” BBQ for private, small events and pop-ups around town. The duo’s relationship with Mendocino Farms began at an Ugly Drum pop-up at Chef Bryant Ng’s Spice Table, where Mendocino Farms’ Executive Chef was blown away by the quality of the smoked meats. When Spice Table closed, she invited Black and Marcos into the Mendocino Farms kitchen to perfect their craft, during which time they developed the house-made pastrami, and collaborated on creating the perfect pastrami sandwich.

Based on the pastrami’s success, the Mendocino Farms’ team is currently building a Los Angeles-based smokehouse to transition the sandwich into a full-time menu item at all Southern California locations in Winter 2014.
